Vegan Coconut Banana Bread


I made this for breakfast last Sunday and my boyfriend ate over half the loaf that day, pig-o!

Preheat the to 350°F and oil your loaf pan.
Combine all your dry ingredients in a bowl:

2 cups flour
3/4 cups sugar
1/2 cup brown sugar
3/4 tsp baking soda
3/4 tsp salt
1 tsp cinnamon
1/2 cup chopped organic walnuts
1/4 cup dried coconut

Now for the wet ingredients.
Whisk together 1/2 cup almond milk with 1 tsp cider vinegar and let it stand for a couple minutes before adding 4 mashed bananas, 1/4 cup canola oil, 2 Tbsp organic maple syrup, and 1 tsp vanilla. Combine well.
Mix together the wet and dry ingredients, then pour the batter into your loaf pan. Bake for 1 hour and 15 minutes.
Cool on a wire rack for 15-20 minutes (or as long as you can stand before diving in!).
It was amazing warm with vegan margarine spread on top.

  1. 3 Bananas instead of 4 seems to be working better for me these days.
